Carrot Cake - Healthy and Vegan!

I modified a recipe I found on Allrecipes.com and it turned out amazing!  Here it is:

Yummy, moist slice of Carrot Cake!
Ingredients:
o    3 prepared egg replacers (EnerG)
o    2 cups whole wheat flour
o    1/2 cup packed brown sugar
o    1/2 cup white sugar
o    1 teaspoon baking powder
o    1 teaspoon baking soda
o    1 1/2 teaspoons ground cinnamon
o    1/2 teaspoon nutmeg
o    1 cup unsweetened applesauce
o    1 T. vegetable oil
o    2/3 cup almond milk
o    1 1/2 cups grated carrots

Directions:
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch pan or two 9 inch round cake pans.
  2. In a large bowl combine; the wheat flour, brown sugar, baking powder, baking soda, and cinnamon, mix until blended. Add the applesauce (I just used two little applesauce cups I always keep on hand for cooking), oil and the almond milk and mix well. 
  3. In a medium bowl prepare the egg replacers and beat until frothy, then continue whipping and gradually add 1/2 cup of white sugar. Beat until stiff.
  4. Fold the eggs into the mix and then the carrots. Pour batter into prepared pan.
  5. Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes. Cool and frost with your favorite Cream Cheese frosting using light cream cheese or stay vegan and use Pillsbury brand Cream Cheese Frosting (only contains Soy).

Wristbands, Necklaces, and Lunch Kits!


Hooray! These are awesome and I had to share. My nephew has nut/egg allergies and this is his brand new wristband.

EASY CAKE

I stumbled upon an easy cake recipe that tastes great.

1 store bought cake mix
10 oz of soda (don't use diet)

Blend with hand mixer, and bake according to directions on the box.

So I bought a chocolate cake and I opened a 12oz can of cream soda. I drank about two ounces of the soda and then I mixed the cake mix with the remaining soda. I baked divided the batter between two 8 inch pans and baked according to the directions on the back of the box.

I let it cool and frosted it. The result is pictured below.


So as a rule to thumb, for white or yellow cakes use a clear soda such as Sprite or 7Up and for a chocolate cake use a cola such as Coke or root beer.

Flax Seed Goo

Flax Seed Goo has been a good egg substitute. I have used it in sweet breads, cakes from scratch, pizza dough and casseroles that require egg.

1/3 cup GROUND flax seed
1 cup water

Mix together throughly.
3 Tbls. of flax seed goo = 1 egg.
Left over can be refrigerated (up to one week) for later use.
Makes the equivalent of 4-5 eggs.

Sugar Cookies! YEAH!!!


Last month we were invited to a Valentine's Day party that included decorating sugar cookies. Both Jemma and I were on a mission to find a sugar cookie recipe that did not include milk or egg. We were amazed at what we found:

This is by far the best sugar cookie recipe I have ever had, even compared to the milk/egg ones! The trick is to not make them too thick or thin and not over cook them. I absolutely had to include the link to this amazing website, they are a godsend!

Wacky Cake Revisited

My sister and I have made this cake so often now that we can probably make it without even looking at the recipe. What we have failed to tell everyone is that it is a dense cake which has worked great for decorating. Attached are some of the cakes we have made with Wacky Cake.

Both the monkey cake and the train cake were decorated by our wonderful brother-in-law, Justin who does cake decorating as a hobby.

Uh oh... It's Halloween Time

Seriously, I never thought I would dread Halloween, but on some level I now do. I have been looking at candy labels and discovered a whole bunch of treats my daughter can't have. I already know about anything with chocolate, duh, but who would have thought that Pop Rocks have milk? It's crazy.

Here is a list of things I have discovered have ingredients my baby can't have:

Candy Corn - Egg Whites
Taffy - Egg Whites
Pop Rocks - Milk
Dove Dark Chocolate - Milk
Hershey's Special Dark Chocolate - Milk

So keep an eye out this Halloween and if there isn't a list of ingredients on the package, do what I do and just throw it out!
